Need a quick and easy dinner? This took about 15 minutes to throw together.
If you are like me, you have many things to do and very little time to cook or even plan. Last Friday, I stopped by the store and checked out the seafood counter at my local store and the Salmon stuck out. Then I thought, what would be good to go with it...salad of course with bay scallops.
To start the process, I cut the salmon fillets into serving sizes and then seasoned with salt and pepper. I'm on a Cajun seasoning fix so I added some as well. I did all this while getting the pan nice and hot on high with some olive oil. I like to use We Olive olive oil. It is a bit more pricey but like wine, olive oil has a range of intensity and flavor. I like to use a lite olive oil for salmon and eggs called Arbequina. They also sell a garlic olive oil that is great for fish, chicken, etc. I also love their blood orange olive oil in brownies for a citrus flavor.
Once the pan is hot enough, put flesh side down on the pan for about three to four minutes and then flip and cook another four minutes. I turn down the heat to medium high after I flip it. It may take a few extra minutes depending on the thickness of the filet.
For the bay scallops, I basically do the same thing and make sure the pan is nice and hot before putting them in. I like to put a dab of butter in with the olive oil. They are the last thing you cook. They only need basic salt and pepper seasoning to taste and take about a minute to cook. Let them sit for about 30-45 seconds and then stir them. If they were bigger scallops, cook about a minute on each side. With scallops, you don't want to cook them too long or they become tough.
Once done, remove the scallops immediately and put on a plate or in a dish for serving.
I chose to get a ready made salad mix that had bacon and dressing. You can use spinach or any other salad you wish.
And when all components are done, plate, serve, and enjoy.
Super simple but full of flavor ...yum!
