Grilled Cordon Blue

Grilled chicken with ham and swiss cheese middle...cheese...mmm! Served with bacon wrapped asparagus.


I just bought a new propane grill by Monument and I have been looking at different things I could make when I came across a Cordon Blue recipe. Typically, I research different versions of a recipe before I take on the dish. Reading reviews and suggestions that I might incorporate into my own dish. Since I was in a rush, I only looked at a few and decided to wing it this time. I figure there is always room for improvement. This was my first attempt at Cordon Blue of any type. I also decided to add some bacon wrapped asparagus which is always a treat.


Cooking Steps


First I rinsed the chicken breast and cut the breast in half without reaching all of the way through to the other end.


Then I laid down the deli slices of black forest ham and put the Swiss cheese on top.


Roll the ham and cheese by folding in half and then in half again. Place the ham and cheese into the center of the chicken. Season the chicken (salt, pepper, etc.) and then spread Dijon mustard on both sides of the chicken breast.


Pre-heat the grill to 375 degrees and place the chicken on the grill. Flip after about 10 minutes and cook on the other side. Use a meat thermometer and make sure the internal temperature reaches 160 degrees.



Lessons Learned


If I had more time, I would have researched a sauce to go over the chicken...maybe a mustard vinaigrette.


I also would have used a meat thermometer as my chicken was starting to get on the dry side. Kind of happens when your in a rush getting ready to head to a billiards league night.


Overall, for something quick and basic, the meal was a success with the family and it is put on the "try this" again list.
